Old Fashioned Potato Salad

1 Cup Mayonnaise
1 TBS cider vinegar
1 1/2 tsp salt
2 tsp prepared mustard
1/2 tsp celery seed
dash pepper

4 hard-coded eggs, chopped
1 1/2 cups sliced celery
1/4 cup sliced radishes
4 cups diced cooked potatoes
1/2 cup sliced green onions
2 TBSP chopped parsley

Mix together first six ingredients

add last six ingredients to a large bowl. add mayonnaise mixture to the final ingredients in large bowl and mix well.  Cover and refrigerate until ready to serve.

Spring Lamb Chops

Ingredients
1.5 – 2 lbs. bone-in lamb chops
kosher salt and freshly ground black pepper
1 tablespoon extra virgin olive oil
1/2 cup Low-FODMAP Chicken Broth
1/2 cup dry white wine
1 tablespoon Dijon mustard
2 teaspoons fresh lemon juice
2 tablespoons cold butter (or Earth Balance vegan butter for dairy-free)
3 tablespoons chopped fresh chives (or 1 tablespoon dried)
1 1/2 teaspoons chopped fresh rosemary (or 1/2 teaspoon dried)
Directions
  1. Season the lamb chops with salt and pepper. Heat the oil in a large skillet over medium-high heat. Sear the lamb chops until golden brown and medium rare (130 degrees F), about 3 – 5 minutes each side, working in batches if needed.
  2. When chops are done, transfer to a serving platter and cover with aluminum foil to keep warm.
  3. Reduce heat to medium-low and de-glaze the skillet by carefully pouring in the broth and wine, scraping up any browned bits. Simmer until broth and wine have reduced by half.
  4. Stir in the Dijon and lemon juice and simmer one minute more. Add the butter and stir until melted. Remove from heat and stir in the chives and rosemary. Season to taste with salt and pepper.
  5. Pour sauce over chops and serve.

Rosemary and Garlic Mashed Potatoes


Ingredients
  • 2.5 pounds potatoes, Yukon gold, washed and cut in 2 to 3-inch pieces
  • 1 tablespoons olive oil
  • 2 tablespoons garlic, minced
  • 1 teaspoons freshly minced rosemary leaves
  • 1/4 cup skim milk
  • 1 teaspoons salt
  • 1/2 teaspoons white pepper
  • 1/8 cup chives
Directions
Add cut potatoes into a large pot and cover by about 1-inch with cold water. Place over high heat until simmering, reduce to medium heat and simmer (do not boil) potatoes for 15 minutes or until fork tender.

Strain potatoes from pot, and set aside. In same pot add oil, garlic and rosemary. Lightly saute over medium heat. When slightly brown add potatoes back to the pot, and mix with garlic and rosemary.

Remove from heat, add milk, salt and pepper, and mash with potato masher. Garnish with chives.

Optionally, add butter and additional milk to taste/texture.

Chicken Alabama - Leslie Christiansen


8 Pieces chicken

1/3 c. flour
1/2 tsp salt
1/2 tsp paprika
dash thyme
dash pepper

Mix flour and spices.  Dredge chicken with flour mix. Shake off flour and sauté in 3 TBSP cooking oil. Place chicken in Casserole dish
Save flour for sauce

2 TBSP butter
1/4 c onion, chopped
1 cup chicken stock or broth
1/2 cup light cream (can be milk, I use heavy cream)
1/4 tsp. lemon juice (I left this out)
2 Tbsp pimento's (optional)
*ground Italian Sausage (optional)

Saute onion in 2 TBSP butter. Stir in extra flour (from chicken). Add chicken stock, cook until thickened. add cream and cook until smooth and thick.
Add lemon juice and pimento. blend well.

Pour over chicken, cover and bake 1 1/4 hrs F@ 325. Serve over rice.

*We just cooked this for Sunday dinner and the sauce looked like country gravy so I made up some more and we had it with mashed potato's.  For left overs the next day I made more "gravy" and added italian sausage.  Needless to say we want to have the left over gravy on some biscuits next.

Simple light mustard vinaigarette

½ cup olive oil
2 tablespoons white wine vinegar
1 teaspoon yellow mustard
¼ teaspoon salt
1 clove garlic, minced
Pinch paprika
Black pepper to taste

Mix vigorously and enjoy!

Best on spinach or light greens (miner's lettuce salad).

Sheppard's Pork and Cabbage Stew

Ingredients
1 tablespoon oil
1 lb. pork tenderloin, cut into 1-inch slices
1 cup julienne-cut (2x1/8x1/8-inch) carrots
1 cup sliced onions
4 medium baking potatoes, peeled, cubed
3 tablespoons chicken-flavor instant bouillon
1 teaspoon dried pork seasoning
1 tablespoon cider vinegar
4 1/4cups water
3 tablespoons all-purpose flour
2 cups thinly sliced cabbage 
Steps
#1 Heat oil in Dutch oven over medium heat until hot. Add pork, carrots and onions; cook until pork is browned. Drain.
#2 Add potatoes, bouillon, pork seasoning, vinegar and 4 cups of the water; mix well. Simmer 30 minutes, stirring occasionally.
#3 In small bowl, combine remaining 1/4 cup water and flour; beat with wire whisk until well blended. Add flour mixture and cabbage to stew; mix well. Cover; simmer an additional 10 minutes or until stew is thickened, stirring occasionally.

Chicken Things by Leslie Christiansen

Chicken breast cooked and cubed
2 8 oz. cream cheese
Chicken broth - can use broth from cooking above mentioned chicken
1 can crescent rolls

In a sauce pan melt cream cheese and enough broth to make a sauce, add chicken and season with salt and garlic salt.

on a cookie sheet lay out 1/2 the of the canned rolls, pinch to seal perforation, fill with chicken mix, cover with remaining rolls and pinch to seal.

Cook according to direction on roll package.

serve with gravy

Gravy:
1 can cream of chicken soup
1 can cream of mushroom soup
milk

Cod Medallions with Penne Rigate

Ingredients (Cod Medallions)
2 tablespoons light butter or margarine
Enough panko to put on top of 4-6 half fillets of cod
2-3 six-ounce fillets of cod, thawed and sliced in half
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon sweet paprika

Ingredients (Penne Rigate with Marinara Sauce)
1 12-ounce package Penne Rigate (gluten-free = ok)
1 24-ounce jar Marinara sauce
1 tablespoon all-purpose herb seasoning
Parmigiano cheese, shredded (optional)

Prep:

  1. Melt butter in saute pan over medium-low heat. Add panko and mix thoroughly. Remove from heat before it browns. Set aside.
  2. Prepare the Penne according to the directions on the box. Keep warm.
  3. Heat 4-6 servings of marinara sauce on low in a saucepan.
  4. Preheat oven to 400 degrees.
  5. Mix salt, pepper, and paprika in a small bowl.


Directions:

  1. Place cod on baking pan and season the half-fillets with salt, pepper, and paprika mix. Place in oven and cook for 10 mins. 
  2. Remove fish from oven and top each cod piece with a tablespoon of the buttered panko. Return to oven for another 5 minutes or so until the fish flakes easily with a fork and the panko crumbs have browned.
  3. Plate a serving of pasta for each person and spoon the heated marinara sauce over the cooked pasta.
  4. Use a spatula to place a cod medallion on each serving.
  5. Top the panko with the herb seasoning and shredded cheese, if desired, and serve.

Craig's Amazing Roasted Pumpkin Seeds

Ingredients:
As many pumpkin seeds as you can collect!
Worcestershire sauce (just enough to coat the seeds)

Directions:

  1. Pick all the seeds you can out of the guts of the pumpkin(s).
  2. Spread them out on cookie sheets so that they can dry.
  3. Leave the seeds out to dry. When the membranes on the seeds begin to separate from the seeds, they are dry enough.
  4. Take the tray outside and hand-rub the seeds until most/all the seeds are clean. Gently blow away the dried membranes as you rub the seeds.
  5. Place the now-clean seeds in a microwave safe bowl and coat with Worcestershire sauce using a mixing spoon.
  6. Microwave the bowl with the coated seeds on high for 1 minute to warm them up.
  7. Mix the seeds again to coat them with the sauce. It sticks better when the seeds are warm.
  8. Spread the seeds out on cookie sheets again and cook on 200F for 2 hours.
  9. Enjoy!

Mentsuyu sauce for soba or tempura

Multipurpose sauce (for noodles and tempura)
Cook Time: 20 minutes
Yield: 1 cup
Ingredients
1/2 cup soy sauce
1/2 cup Mirin
1/4 cup sakehandful of Dried Bonito Flakes
Instructions
Put all the ingredients in a pot.
Let it boil and remove from heat.
Cool completely in the pot.
Strain bonito flakes.
Add water to taste.

Simply Delicious Tartar Sauce

Simple, but delicious tartar sauce. Great for fish!

1/2 cup low-fat Sour Cream
2 tbsp pickled sweet relish
2 tbsp mayonaise
2 tbsp finely chopped onions
2 tbsp lemon juice
1 tsp salt

Mix and serve.

Nobu's Miso-Marinated Black Cod Recipe

Adapted from Nobu: The Cookbook, Serves 4

1/4 cup sake 
1/4 cup mirin 
4 tablespoons white miso paste 
3 tablespoons sugar 
4 black cod fillets, about 1/2 pound each
Two to three days beforehand, make the miso marinade and marinate the fish. Bring the sake and mirin to a boil in a medium saucepan over high heat. Boil for 20 seconds to evaporate the alcohol. Turn the heat down to low, add the miso paste and whisk. When the miso has dissolved completely, turn the heat up to high again and add the sugar, whisking constantly to ensure that the sugar doesn't burn on the bottom of the pan. Remove from heat once the sugar is fully dissolved. Cool to room temperature.
Pat the black cod fillets thoroughly dry with paper towels. Slather the fish with the miso marinade and place in a non-reactive dish or bowl and cover tightly with plastic wrap. Leave to marinate in refrigerator for 2 to 3 days. 
To cook the fish: Preheat oven to 400°F. Preheat a grill or broiler. Lightly wipe off any excess miso clinging to the fillets but don't rinse it off. Place the fish skin-side-up on the grill, or in a broiler pan, and grill or broil until the surface of the fish browns and blackens in spots, about 3 minutes. Flip and grill or broil until the other side is browned, 2 to 3 minutes. Transfer to the oven and bake for 5 to 10 minutes, until fish is opaque and flakes easily.

BBQ Sweet Sauce

"Sweet Sauce"
by Aaron Franklin, world famous BBQ master in Austin, TX.

14 oz. ketchup
5 oz. water
2.5 oz. apple cider vinegar
2.5 oz. white vinegar
4.5 Tbsp. brown sugar
2.5 Tbsp. Worcestershire sauce
1 Tbsp. chili powder
.5 Tbsp. Kosher salt
.5 Tbsp coarse-ground black pepper
1 tsp. cumin

Mix all ingredients in a pot and simmer until the flavors are well combined, about 20 minutes. Remove from heat. Once cool, store in an air-tight jar or bottle in the refrigerator. “It should stay good for months!” says Aaron. 

Roy's Misoyaki Butterfish Recipe

Found this great recipe over on the Home and Family section of the Hallmarkchannel.com website. Haven't tried it yet, but it looks about as authentic as it could be. Enjoy!

Tips:
Buy the freshest fish.
Fresh fish is vibrant in color.
Don't overcook! Cook on medium temperature.
Cook each side evenly.

Misoyaki Butterfish
Four 3-7 oz. boneless Black cod fillets or other oily fish.

For Marinade:
1 cup mirin
1 cup sake
1¼ lb shiro miso paste
1½ lb sugar


Method:
Bring all ingredients to a simmer and let cook until a medium caramel color is achieved. This will take 45 minutes to 1 hour. Cool.

Once cool, place fish in marinade and leave for 1-3 days.

When ready, sear fish on med-low heat on each side until nicely browned and cooked through in the middle. Finish under broiler.

For Sauce:
12 oz Red Bell pepper (finely minced)
12 oz Yellow Bell pepper (finely minced)
24 oz Onion (pulverized)
24 oz Daikon (pulverized)
9 cloves Garlic (fine minced)
3 oz Ginger (fine minced)

¼ bunch Cilantro (fine minced)
1 oz Scallion (fine minced)
4 oz Rice wine vinegar
8 oz WHEAT FREE Soy- Kikkoman
8 oz Vegetable stock
30 oz soy bean oil


Baby Bok Choy
½ lb Bok Choy
1 Tbsp Garlic (chopped)
1 Tbsp Ginger (chopped)
To taste Kosher Salt and Black Pepper
1 Tbsp Butter

Method:
Blanch in lightly salted water for thirty seconds, then sauté bok choy in a pan with garlic, ginger, butter, kosher salt, and pepper.

Serve Butterfish with rice and sautéed baby bok choy.

Best Guacamole Recipe Ever

2 ripe avocados
1 plum tomato, chopped
1/2 cup sour cream
2 tbsp chopped, pitted ripe olives (optional)
2 tbsp chopped onion
1 tbsp snipped fresh cilantro
1 tsp lime juice
3/4 tsp salt

Mash avocados in large bowl.  Add remaining ingredients and mix thoroughly.

Sirloin Steak Kabobs

Another recipe Natalie shared with me, not sure where she found it but I have to save it somewhere so I can find it again.  This was really, really good.
 
1 lb sirloin steak 
1/2 cup butter 
2 TBS minced garlic 
1 TBS garlic salt 
1 tsp salt 
 1. Melt butter. 
2. Mix together butter, garlic, garlic salt and salt. 
3. Cut steak meat into about 1.5 inch pieces (cubes). 
4. Baste butter mixture onto steak pieces. 
5. Stick steak pieces onto kabob sticks 
5. Grill for about 15 minutes. 
6. Rotate skewers every couple of minutes, cooking evenly on each side. 
7. Re-baste meat throughout grilling process, because a lot of the flavor will cook off. 
8. Check steak temperature when you are done grilling, meat should be 150 for medium well/ or cut one piece open to check the color inside, should be light pink for medium well steak.

SEAFOOD ENCHILADAS

1 Onion chopped
1 TBSP Butter
1/2 lb fresh crab meat
1/4 pound shrimp - peeled, deveined and coarsely chopped
8 oz colby cheese
6 (10 inch) flour tortilla shells


1 cup half and half cream
1/2 cup sour cream
1/4 cup butter, melted
1 1/2 tsp dry parsley
1/2 tsp. garlic salt

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet, saute onions in 1 tablespoon butter until transparent. Remove the skillet from heat and stir in crabmeat and shrimp. Shred the cheese and mix half of it into the seafood. Place a large spoonful of the mixture into each tortilla. Roll the tortillas up around the mixture and arrange the rolled tortillas in a 9x13 inch baking dish.
  3. In a saucepan over medium-low heat, combine half-and-half, sour cream, 1/4 cup butter, parsley and garlic salt. Stir until the mixture is lukewarm and blended. Pour sauce over the enchiladas, and sprinkle with remaining cheese.
  4. Bake in preheated oven for 30 minutes.

CLAM CHOWDER

2 C diced potato
2 C diced celery
1 C onion, chopped
2 cans chopped clams (I use 3 to 4)

Place potato, celery and onion in pan, cover with juice from clams and water as needed. Cook until barely tender, 20 - 30 minutes.

In a large pan make white sauce as follows:

3/4 C. water
3/4 C. flour
1 qt milk (I use half and half)
1 tsp. salt
1/2 tsp pepper
1 C butter

 Melt butter, stir in flour, add milk and heat until thick. Add previous mixture not draining. Add clams and seasoning.

variation: add crumbled bacon  

CHEESE BALL

2 8oz. cream cheese, softened
1 bunch green onions, chopped
1 (4 oz) can chopped olives
1 scant TBS Bon Appetit seasoning salt
chopped nuts
crackers

Mix first 4 ingredients well. Form into 2 balls. Roll in chopped nuts. Chill.  Serve with Crackers
