Nobu's Miso-Marinated Black Cod Recipe

Adapted from Nobu: The Cookbook, Serves 4

1/4 cup sake 
1/4 cup mirin 
4 tablespoons white miso paste 
3 tablespoons sugar 
4 black cod fillets, about 1/2 pound each
Two to three days beforehand, make the miso marinade and marinate the fish. Bring the sake and mirin to a boil in a medium saucepan over high heat. Boil for 20 seconds to evaporate the alcohol. Turn the heat down to low, add the miso paste and whisk. When the miso has dissolved completely, turn the heat up to high again and add the sugar, whisking constantly to ensure that the sugar doesn't burn on the bottom of the pan. Remove from heat once the sugar is fully dissolved. Cool to room temperature.
Pat the black cod fillets thoroughly dry with paper towels. Slather the fish with the miso marinade and place in a non-reactive dish or bowl and cover tightly with plastic wrap. Leave to marinate in refrigerator for 2 to 3 days. 
To cook the fish: Preheat oven to 400°F. Preheat a grill or broiler. Lightly wipe off any excess miso clinging to the fillets but don't rinse it off. Place the fish skin-side-up on the grill, or in a broiler pan, and grill or broil until the surface of the fish browns and blackens in spots, about 3 minutes. Flip and grill or broil until the other side is browned, 2 to 3 minutes. Transfer to the oven and bake for 5 to 10 minutes, until fish is opaque and flakes easily.

GRANDMA KEYSER'S CHOW MEIN






Ingredients: amounts to taste
Pork - cubed
Celery - sliced on a slant 1/4 - 1/2 inch thick
Onion - slice 1/4 - 1/2 inch thick
Sprouts
Water Chestnuts
Chow mien noodles

Cook pork in fry pan cover with 2-4 cups of water and simmer until tender (plan about an hour) add water as needed.

In a large pot place onions and cover with water, bring to a boil. Add celery and boil for another minute.  Drain vegetables, reserve water. Add sprouts and Water Chestnuts

Pour water from meat to another pan, add corn starch to thicken adding  vegetable water as needed. Pour gravy into vegetables, add soy sauce to flavor. Stir gently to mix careful not to break sprouts.

Serve over chow mein noodles

Gyudon

I took this from an About.com recipe and changed it a little to taste.
Simmered beef is served on top of steamed rice. It's one of the most popular rice bowl dishes (donburi) in Japan.
Yield: 4 servings
Ingredients:
4 cups steamed Japanese rice
1 lb thinly sliced beef loin, cut into 2 inch lengths
1 onion, thinly sliced
1 1/3 cup dashi soup
1 cup water
4 Tbsp soy sauce
1Tbsp fresh ginger juice (grate and filter by wringing the mush through a paper towel)
1 crushed garlic clove
3 Tbsp mirin
2 Tbsp sugar
1 tsp sake (optional)
benishoga (pickled red ginger) for topping *optional
Preparation:
Put dashi, soy sauce, sugar, mirin, and sake in a large pan and bring to a boil on medium heat. Add onion slices and simmer for a few minutes or until softened. Add beef in the pan and simmer for a few minutes. Serve hot steamed rice into individual deep rice bowls. Put simmered beef on top of the rice. Top with some benishoga if you would like.

Korean-Style Beef Bowl

This recipe is super easy and easily one of Kurt's favorite dishes I make. It's from the Pampered Chef 29 Minutes of Less cookbook -- which is even better for me, because I'm really bad at planning ahead. :) However, if you do plan ahead the steak would probably be even tastier if you started marinating it earlier in the day.

Steak & Marinade:

2 green onions w/tops, divided
1 lb skirt steak - also called flank steak (we've tried other cuts of meat and they don't work as well)
2 garlic cloves, pressed
3 tbsp soy sauce
1 tbsp sesame oil
1 tsp coarsely ground black pepper
1 tbsp sugar
1 tsp vegetable oil (I used Olive oil)

Rice & Vegetables:
1 cup uncooked jasmine rice (I usually use our Japanese white rice, either would work)
2 medium carrots
2 cups bean sprouts

1. For steak & marinade, thinly slice green onions, reserving 1 tbsp of the tops for garnish; place remaining green onions into bowl.

2. Cut steak crosswise into 2-in (5-cm) pieces. Slice each piece into thin strips, cutting against the grain; add to bowl. Press garlic over beef. Add soy sauce, sesame oil, black pepper &; sugar; mix well. Cover & refrigerate until ready to use.

3. As beef marinates, cook rice.

4. Meanwhile, for vegetables, peel carrots; discard skin. Continue peeling carrots to make long ribbons. Place ribbons into ice water until ready to serve

5. To finish steak, add vegetable oil (or what ever type of oil you want to use) to (12-IN/30-CM) SKILLET; heat over medium-high heat 1-3 minutes or until shimmering. Add beef to skillet in a single layer and cook undisturbed 2 minutes or until beef is brown. Stir; cook an additional 3-4 minutes or until beef is no longer pink. Remove from heat.

6. Divide rice among serving bowls and serve with beef, carrots and bean sprouts. Garnish with reserved green onion tops.

Yield: 4 servings

Chicken Katsu Recipe

This is a simple recipe of a dish that is widely popular at local restaurants in Hawaii. The key component of this dish is the sauce, which could be bought at an Oriental Foods store as tonkatsu (pork cutlet) sauce. But I have included a recipe for it here. I searched over years to find a recipe for the sauce, then finally modified one to match what can be found in Hawaii. I think its perfect now, so I hope you like it. The sauce is best if made a few hours in advance and refrigerated. If you can't get the panko flakes, you can just use flour or some other breading, but it won't be as crispy.

SERVES 3 -4

  1. For the Sauce:.
  2. Add sauce ingredients to a bowl one by one, mixing in between.
  3. For the Chicken:.
  4. Place flour, eggs, and panko in separate bowls.
  5. Lightly salt chicken then dip in eggs, then in flour, then in eggs, then in panko.
  6. Deep fry or pan fry at medium heat until lightly brown.
  7. Serve with sauce and hot rice.
